Van Buren Meats

            The winding scenic road that leads to Banock Farms is vivid and alive this time of year with shades of green intertwining together in the trees to paint the picture of what most of us refer to in rural America as “God’s country”.    This day was no different as I made my way through the backroads to meet with the Daugherty family about their latest agriculture endeavor, Van Buren Meats.

            Banock Farm’s moniker came from matriarch Audra Daughtery, grandmother to owners Carl and Pat Daugherty.  From about 1928-1957 Ms. Daugherty ran the Banock Post Office, thus choosing the name Banock Farms for her family’s property.  The name Van Buren Daugherty originated from the owner’s great grandfather who established the farm land in 1875, the descendent of an Irish immigrant.  Family roots run deep on the Banock farm land, spanning six generations of the Daugherty’s tending the land and its stock.

            At first, they began selling their meats from their home, but soon realizing the demand and potential of the home raised meats, brothers Carl and Patrick Daugherty built their storefront building last winter. 

            All their meat products are naturally raised on site at Banock Farms and are then taken offsite to be vacuumed sealed for resale.  They contain no antibiotics, no growth hormones, and are USDA inspected.  The beef is an Angus breed cross, dry aged for 14 days.  The science behind the dry age process is quite simple, meat is virtually a muscle and muscle is made up of proteins.  During the aging process these proteins are broken down creating tender, flavorful, cuts of beef.

            Banock Farms does not offer the same pork you will find in the grocery store.  Their pork is harvested from the Berkshire breed of pig.  Berkshire pork is virtually the Cadillac of pork meats.  Unlike other breeds, it has a rich marbling, tender taste, and juiciness.  You must taste this pork to see the difference.
