Patty Craig: A Slice of Time

 

Since the Coronavirus (COVID-19) pandemic is keeping us at home, my daughters and I have been more interested in-home cooking. We often enjoy the one-pan-meal kind of dish. The recipes below come from friends and family.

Linda’s Skillet Breakfast

Ingredients

½ lb. bulk pork sausage

2 c. frozen shredded hash brown potatoes

1 can Rotel diced tomatoes and green chilies, drained

½ lb. cheese: Velveeta, cut up, or your favorite REAL cheese

6 eggs, beaten with 2 T. water

Directions

Preheat oven to 375 degrees. Using an oven-proof skillet, brown sausage and drain. Add potatoes and tomatoes to the sausage; mix well. Cook 5 minutes, stir occasionally. Top with cheese. Beat eggs and 2 T. water with a whisk. Pour evenly over ingredients in the skillet. Bake 20 to 25 minutes or until egg mixture is set in center and cheese is melted. Remove from oven and let stand 5 minutes before cutting into wedges.

Britney’s Noodle Beef Casserole

Ingredients

1 bag wide egg noodles

1 lb. ground beef

1 can cream of chicken soup

1 can cream of mushroom soup

8 oz. sour cream

1 can whole kernel sweet corn, drained

1 small jar pimentos (or ½ large jar)

2 sleeves Ritz crackers, crushed

1-2 T. melted butter

Directions

Boil egg noodles, following directions on package, and drain. Cook ground beef and drain. In a large bowl, mix together cream of chicken soup, cream of mushroom soup, sour cream, corn, and pimentos. After it is mixed together, add the cooked ground beef. Then stir in ½ of the cooked noodles. When mixed well, stir in the remaining noodles. Pour into a 9x13 baking dish. Mix crushed Ritz crackers and melted butter and sprinkle on top. Bake at 350 degrees for 25-30 minutes.

Carolyn’s Taco Casserole

Ingredients

1 ½ - 2 lbs. ground beef

1 can chili beans

1 can whole kernel corn

1 package taco seasoning

2 c. shredded cheese (such as cheddar, mozzarella or Mexican blend)

1 bag tortilla chips

Note: Serve with salsa and sour cream

Directions

Crush chips to line a 9x13 baking dish. Brown ground beef and drain. Add beans, corn, and taco seasoning to the ground beef. Mix well and pour over top of chips in baking dish. Top with cheese. Bake at 350 degrees for 30 minutes. Let rest 15 minutes. Serve with salsa and sour cream.

Debbie’s Easy Chicken Pot Pie

Ingredients

12 ½ oz. can cooked chicken breast, drained

10 ¾ oz. can 98% fat free cream of chicken soup

8 ½ oz. can peas and carrots, drained

1 tsp. dried parsley

¼ tsp. black pepper

1/8 tsp. salt

7 ½ oz. can Pillsbury buttermilk refrigerated biscuits

Directions

Preheat oven to 350 degrees. In a medium bowl, combine chicken, soup, peas and carrots, parsley, black pepper and salt. Mix well to combine. Spray an 8x8 baking dish with non-stick cooking spray. Pour chicken mixture into baking dish. Slightly flatten biscuits between your palms. Top chicken mixture evenly with biscuits. Bake for 25 minutes or until biscuits are golden brown. Serve immediately.

Linda’s Ground Beef Stroganoff

Ingredients

1 lb. ground beef

1 c. onion, chopped

1 can cream of mushroom soup

½ c. sour cream

½ tsp. paprika

Egg noodles (Follow directions on package.)

Directions

Brown ground beef and onion, then drain. Add soup, sour cream and paprika. Simmer 20 minutes. Serve over hot egg noodles.

Pat’s Pork Loin and Sauerkraut with Potatoes and Carrots

Ingredients

2-3 lbs. of pork loin, sliced into portions

1 package of baby carrots

6-8 potatoes, peeled and sliced in half

14.5 oz. can of sauerkraut

1 tsp. salt

Directions

Preheat oven to 350 degrees. Layer the sliced pork loin in the bottom of a large roasting pan. Add enough water to the pan to cover the pork and sprinkle salt over the meat. Add the carrots and potatoes on top of the pork. Pour the sauerkraut over the vegetables, scattering over the entire pan. Bake in preheated oven for 3 hours until pork is tender (Following a 3-minute rest, the internal temperature of the pork should reaches 145-160 degrees F.).

Currently, one consideration in choosing a recipe is whether the ingredients are readily available. For me, cooking and baking are good ways to de-stress. And like many of you, I might as well relax since I’m not going anywhere.
