Patty Craig: A Slice of Time

 

Since St. Patrick’s Day is approaching, I searched for recipes that will display an acknowledgement of the holiday. These three recipes were found on the Taste of Home website – a wonderful source of recipes. I believe my family will enjoy any of these choices.

 Wearing O’ Green Cake

Ingredients

1 package white cake mix (regular size)

2 packages (3 ounces each) lime gelatin

1 cup boiling water

1/2 cup cold water

Topping:

1 cup cold milk

1 package (3.4 ounces) instant vanilla pudding mix

1 carton (8 ounces) frozen whipped topping, thawed

Green sprinkles

Directions

·        Prepare and bake cake according to package directions, using a greased 13x9-in. baking dish. Cool on a wire rack 1 hour. In a small bowl, dissolve gelatin in boiling water; stir in cold water and set aside.

·        With a meat fork or wooden skewer, poke holes about 2 in. apart into cooled cake. Slowly pour gelatin over cake. Cover and refrigerate.

·        In a large bowl, whisk milk and pudding mix 2 minutes (mixture will be thick). Fold in whipped topping. Spread over cake. Decorate with sprinkles. Cover and refrigerate until serving. Yield: 12-15 servings.

 

Grasshopper Pie

Ingredients

6 ounces cream cheese, softened

1 can (14 ounces) sweetened condensed milk

15 drops green food coloring

24 chocolate-covered mint cookies, divided

2 cups whipped topping

1 chocolate crumb crust (9 inches)

Directions

In a large mixing bowl, beat the cream cheese until fluffy. Gradually beat in milk until smooth. Beat in the food coloring. Coarsely crush 16 cookies; stir into the cream cheese mixture. Fold in whipped topping. Spoon into the crust. Cover and freeze overnight. Remove from the freezer 15 minutes before serving. Garnish with remaining cookies. Yield: 8 servings.

 

 Lemon-Lime Punch

Ingredients

2 quarts water

2 cups sugar

2 envelopes unsweetened lemon-lime soft drink mix

1 can (46 ounces) unsweetened pineapple juice

1 liter ginger ale, chilled

1  quart lime sherbet

Directions

In a punch bowl, combine the water, sugar and soft drink mix; stir until dissolved. Stir in pineapple juice. Refrigerate until chilled. Just before serving, stir in ginger ale and top with scoops of sherbet. Yield: 6 quarts.
