Vegetable Noodles and Rice Are Trending in 2020

The National Restaurant Association has released its 2020 culinary forecast which predicts that vegetable noodles and rice will be a culinary trend this year. Vegetable noodles and rice are a creative way to include more vegetables in your day. You can use vegetable noodles and rice in place of traditional noodles and rice. You can also enjoy them as a tasty side dish or add them to your spaghetti or rice pilaf for a vegetable-rich entrée.

You can make vegetable noodles using a special utensil called a spiralizer. If you don’t have one of these at home, try using your vegetable peeler to make vertical shave-like cuts down your vegetable. You can leave these as wide noodles or cut them into thin strips. Vegetable noodles and rice are even available in the frozen section for a no-prep option. Popular vegetables to make into noodles include summer and winter squash, potatoes or sweet potatoes, carrots, broccoli, beets, and turnips. Vegetable rice can be made of similar vegetables, but the most popular options include broccoli and cauliflower rice.

Sautéed Zucchini Noodle

Ingredients:

2 zucchini, spiralized (fresh or frozen)

-         

1 tbsp oil or butter

-         

1 tbsp minced garlic

-         

Salt and pepper to taste

Directions:

1.      

If using frozen zucchini, steam according to package directions before proceeding to step 2.

Add oil/butter, garlic, zucchini noodles, and salt/pepper to hot skillet.

3.     

Cook for 2-3 minutes, then serve.
